Hot Crispy Chicken Drumsticks
(serves 6)
 
 
12 chicken drumsticks
6 oz (150g) unsalted butter
2 garlic cloves, crushed
1 tsp grated fresh ginger
2 tsp ground turmeric
4 tsp cayenne pepper (or fresh or dried chilli peppers, finely chopped)
juice of 2 limes
3 tbsp mango chutney
 
   
 Beat the butter, garlic, ginger, turmeric, cayenne pepper, lime juice and mango chutney.
Slash each drumstick 3 or 4 times to the bone. Grill under a pre-heated grill for 12-15 minutes until almost cooked, turning halfway through.
Spread with the butter mixture. Cook for a further 5-6 minutes, turning and basting frequently with the butter until golden and crispy.
Serve hot or cold, with salad or rice.
